BLACKBERRY + COCONUT YOGHURT W/SUMMER FRUITS
What's great about it
The simple things in life are often the best. This is one of my favourite quick and easy to make nourishing breakfasts from my cookbook, Earth To Table. I love stirring a generous serve of Healthy Chef Organic Superfood through yoghurt and topping with fresh berries. Not only is it a stunning colour, but it makes a spectacular breakfast. Rich in antioxidants to nourish your immune system.
Ingredients
serves 2
125 g (4 oz) blackberries
250 ml (1 cup/8 fl oz) coconut yoghurt or Greek yoghurt
1-2 tablespoons Healthy Chef Organic Superfood
250 g (8 oz) fresh berries (strawberries, blueberries etc)
Method
ADD your yogurt into a large bowl.
STIR Organic Superfood through your yogurt until lovely and pink and mixed through.
SMASH or puree the blackberries.
FOLD smashed blackberries into the yoghurt then divide between serving bowls.
ARRANGE over mixed berries or your choice of fruits. You can also add extras such as walnuts or pomegranate or granola if you like.
SERVE and enjoy.
Notes and Inspiration
Top with granola or a handful of omega 3 rich walnuts. Blend with ice, coconut water and a spoonful of protein for a delicious breakfast shake.
