TRADITIONAL ANZAC BISCUITS

Here is my delicious, crunchy and golden Traditional Anzac Biscuit recipe. My recipe swaps white flour for spelt flour, known for its nutty flavour and nutritional benefits. Combined with hearty oats and the natural sweetness of unrefined sugar, these biscuits are a delicious treat that you'll make again and again.
Ingredients
1 generous cup (140g) wholemeal spelt flour
1 cup (100g) desiccated coconut
1/2 generous cup (80g) coconut sugar, (or any other unrefined sugar)
1 cup (100g) rolled oats
125g butter, (I used slightly salted butter)
60ml (1/4 cup) pure maple syrup
2 teaspoons vanilla extract
1/2 teaspoon bicarb soda (baking soda)
1 tablespoon water, hot
Method
PREHEAT your oven to 160°C fan-forced.
COMBINE the spelt flour, coconut, coconut sugar and rolled oats into a mixing bowl.
MELT THE BUTTER in a small saucepan with the maple syrup.
MIX the bicarb soda and hot water together and add this to the melted butter, then mix through and remove from the heat.
ADD the hot butter mixture into the dry ingredients along with the vanilla and mix through until combined.
DIVIDE the mixture into 12 round balls and place onto a baking tray.
FLATTEN down the biscuit mixture using your fingers.
BAKE for 15 minutes and remove from the oven to cool.
